So in the past couple of weeks I've gotten 3 different requests for recipes so I've decided to post the most requested on here for ease of use in case they can't get in touch with me when they need them! lol

 king ranch recipe.

1 can cream of chicken soup
1 can cream of mushroom soup
2 cups chicken broth
1 can rotel tomatoes
1 12 ounce package corn tortillas
3 cups cooked diced chicken (put 2 chicken boulion cubes in water while cooking chicken)
1 onion chopped
1 green bell pepper (optional)
1/2 pound shredded cheese (I use colby jack)
1 tsp garlic salt

preheat oven to 350

combine the soups, broth, garlic salt and tomatoes heat till mixed well
lightly grease caserole dish (I use the spray non stick stuff in a can)
layer the tortillas (I tear them to lay them out covering the whole bottom of the dish) 1/2 the chicken, 1/2 onion, 1/2 bell pepper, 1/2 cheese. Pour 1/2 soup mixture and repeat layers. Cover with cheese, cover with foil and bake 30-45 minutes. I usually take the foil off the last 10 minutes or so.



Chicken and Rice


I cook a whole chicken (put 2 chicken boulion cubes in water while cooking chicken) season while cooking with garlic and pepper in a dutch oven on top of the stove until done. debone chicken and set aside. Reserve 2 cups of the broth.
After deboning and emptying the broth, in same pot put a little oil and 1 chopped onion, simmer until onion is clear, then add a spoon of flour and mix into the onion mixture add 2 cups broth and 2 cups milk and bring to a slow boil, add 1 can cream of musroom and 1 can cream of chicken soup, 1 small jar chopped pimento and about 2 tblsp of lemon juice, (you just have to taste this until it's right), add more garlic either chopped or garlic salt and pepper, bring to slow boil again and then add chicken. Simmer for at least 30 minutes and serve over rice.


Tortilla soup

1 whole chicken or 3 chicken breasts boiled with water or chicken broth (put 2 chicken boulion cubes in water while cooking chicken) garlic salt and pepper.

Dice chicken and return to broth. Add 1 can rotel tomato, small can or bottle (about a cup) V8 or a can of crushed tomatoes, pinch of cummin and whatever else you feel like adding. Sometimes I put a can of black beans and some corn. Some fresh cilantro Let all that simmer for at least 30 minutes (this and the chicken and rice are good for crock pots) mix up some corn starch and a little water and add to thicken the broth up (this is optional)

Either cut up corn tortillas and bake them in the oven or in a time crunch just put tortilla chips in the bottom of the bowl and cut up avocado on top of that, pour soup over the chips and avocado and put a little shredded colbyjack cheese. Enjoy!

Abby's Stuff (hamburger, macaroni casserole)

preheat oven to 375
Brown 1.5 lbs hamburger and 1 diced onion. (season with lawrys and pepper)
Cook 1/2 to 3/4 cup macaroni
put browned hamburger, 1 can diced tomatoes (I use the roasted garlic or garlic oregano seasoned tomotoes) and cooked macaroni in casserole dish.  Sprinkle with garlic salt and pepper mix together well.  Cut up string cheese into 1/2 inch sections and push down into mixture, cover with shredded colby jack, cover with foil and bake for at least 30 minutes or until bubbling on sides and cheese melted.  Take foil off the last 10 minutes to brown top of cheese.

Potato soup

Dice potatoes and boil until very soft. Garlic salt and pepper while cooking  (usually about 30 minutes) After potatoes are done and the mixture is all mushy add a little half and half (milk will work if you don't have it) Put in bowl sprinkle some real bacon bits and shredded cheese on top, enjoy!

Pot Roast

season with lawrys and pepper brown in skillet on all sides and then place in crock pot or large pan for oven.  Cut up potatoes and carrots and place around meat.  Put water in skillet and pour in water and 1 package of brown gravy mix stir and pour over meat and vegetables.  If cooking in crock pot cook on low for 4-5 hours if cooking in oven cook at 375 for 2 hours (unless it's a very large roast then you will need to cook a little longer)
